Food Vendors

All food vendors must have a fire extinguisher with current tags for inspection. Booths must have fire tags per state fire marshal requirements.
Please be aware that Rio Vista gets windy; if you are using a tent, make sure you bring weights to anchor it.
To assure the public a variety of foods, all menu items must be approved by the Food Vendor Coordinator and provided to Solano County Health Dept.

SET-UP BEGINS AT 6:30AM AND MUST BE COMPLETED BY 9 AM. THE EVENT STARTS AT 10AM.

Things to know:
1) You must MAKE 5 GALLONS OF CHILI and have it ready for tasting by 12 pm. Voting by the public will
start at 12:30 pm until chili runs out.
2) If perishable ingredients are purchased before 8/23/2025, they must be stored in a commercial
refrigerator.
3) Food Safety is our #1 Priority. Meat must be in commercially sealed packaging RAW & UNTREATED.
4) All food must be ready for inspection no later than 8 a.m. All food preparation must be done on site.
5) ALL PREPARATION MUST BE WITHIN A FULLY ENCLOSED SCREENED TENT, WITH HAND WASHING
STATION IN THE TENT OR AT 45 MAIN ST. For complete instructions see Solano County requirements online

6) Cooking is done outside of the tent area due to fire codes.
7) Utensil washing stations will be provided. You must provide your own hand washing station.
8) Juried chili will be judged based on ICS rules for consistency, taste, color, aroma & aftertaste

Things to Know:

Food safety is our #1 priority. All food must be ready for inspection no later than 8 a.m. All food preparation must be done on
site inside of 45 Main Street to meet County Health Requirements including all sauces, rubs and marinades for both juried
judging and People’s Choice.
2) Juried rib judging will begin at approximately 2:30 p.m. ~ Times assigned at team meeting
3) People’s Choice will be judged by the public and will begin promptly at 3:00 p.m. inside 45 Main St.
4) There is a meeting at 7 a.m. for team captains to go over rules and receive juried judging time.
5) Juried judging will be based on Kansas City Barbeque Society rules. However, this is not a KCBS sanctioned event. See
www.kcbs.us for more information. You will be judged on: flavor, texture & appearance.
